Christmas Peanut Brittle

brittle is easy to make and also makes a terrific gift from the kitchen.

Peanut Brittle Recipe


Ingredients for peanut brittle

1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts
2 tbs butter, softened
1 tsp baking soda

Directions for Cooking

Grease a large cookie sheet and then set it aside for later.

Using a heavy saucepan, bring sugar, corn syrup, salt and water to a boil over medium heat, stirring until the sugar is dissolved.

Add peanuts to mixture and stir in.

Continue cooking, stirring frequently until candy thermometer reaches 300 degrees F (150 degrees C), or until a hard ball forms when a little brittle is dropped into very cold water.

Remove peanut brittle from heat and immediately stir in butter or margarine and baking soda.

Pour candy onto greased cookie sheet at once.

Using 2 forks, lift and pull peanut mixture into rectangle about 14×12 inches and allow to cool.

I love historic recipes and when my mom gave me an old Iowa Farm Bureau Cookbook, published in the 1920’s, I was in heaven. Since I now have the cookbook my own mother and grandmother used to make many of our family dishes, my dad asked me to find a piccalilli recipe for him.

There was one very funny story involving piccalilli relish in a book I was just reading, All Things Bright and Beautiful by James Herriot about a British country vet, set in the 1930’s. Many on the farms in England, and here in the US on country farms, loved piccalilli relish.

Here are two piccalillli relish recipes from my historic Iowa Farm Bureau cookbook. Some directions in historic recipe books seem very vague to us these days, but most farm wives back then already knew all the basics and took the directions for granted.

Ingredients for Piccalilli Relish

1 package green tomatoes
6 medium onions
1 medium head cabbage
1 1/4 c salt
6 green peppers
1 red pepper
2 cups sugar
1 tsp cloves, cinnamon and mixed spices

Directions

Put vegetables through a food chopper, then add salt. Let misture stand over night and then drain off liquid.

Add vinegar and spices and cook “gently” for one-half hour.

Put into sterilized jars and seal while hot.

Recipe 2 for Piccalilli Relish

This version will be spicier and makes more than recipe one.

Ingredients

1 package green tomatoes
8 large onions
1 cup salt
2 quarts water
1 quart vinegar
2 cups sugar
2 quarts vinegar
1 tablespoon white mustard seed
2 tbs ginger

1-2 tbs cayenne pepper
2 tbs cinnamon
1 tbs cloves and allspice

Directions

Chop fine tomatoes and onions, stir in salt and let it stand over night.

In the morning, drain off liquid.

Boil 2 qts water and 1 qt vinegar with tomatoes for 20 minutes.

Drain, put in kettle.

Put spices into cheesecloth and form a bag. Add this to the kettle, along with 2 quarts vinegar. Boil these together for another 20 minutes.

Add sugar if more sweetness is desired.

Makes 7 pints.

Very Easy Blueberry Syrup Recipe

This blueberry syrup recipe is super easy and delicious. It can be used over ice cream, pancakes or waffles or add it to ice tea for a great berry flavored drink. It also makes a delicious gift from your kitchen for the holidays.

Ingredients for Easy Blueberry Syrup

3 c blueberries fresh or frozen

2/3 c. light corn syrup

Dash of salt

Cooking Instructions

Place all three ingredients into your blender. Cover and blend on liquid setting until syrup is smooth.

Pour blueberry mixture into a medium saucepan.

Boil mixture for about 5 minutes. Stir constantly to avoid sticking.

This easy blueberry syrup is terrific served over waffles or pancakes or try it on ice cream. Can also be added to your ice tea to make blueberry iced tea. This syrup can also be chilled and reheated.

This easy recipes yields 3 1/2 cups of blueberry syrup.

splurge on calories if you’re adding superfood blueberries to your muffins. They make a tasty treat for breakfast, dinner or a snack.

Ingredients

1 stick butter, softened
3/4 c. sugar plus additional for sprinkling the muffins
2 lg. eggs
1 1/2 tsp. vanilla
3/4 c. sour cream
2 c. all-purpose flour
1/4 tsp. baking soda
1/2 tsp. salt
2 c. fresh blueberries

Directions

Cream butter and 3/4 cup of the sugar in a medium mixing bowl, then add eggs, beating them in one at a time.

Add vanilla and sour cream and continue beating.

In a separate mixing bowl sift together flour, baking soda and the salt.

Stir flour mixture into butter and sour cream mixture until well combined.

Fold blueberries into the batter.

Spoon the batter into a 12 muffin tin baking pan, with paper liners.

Sprinkle blueberry muffin tops with additional sugar.

Bake these sour cream blueberry muffins at 375 degrees for 25-30 minutes or until just golden and a toothpick comes out clean.

Ingredients

1/4 c fresh lime or lemon juice
1 tbs honey or sugar
1/2 tsp salt
1 c fresh blueberries
1/4 c plain yogurt
2 tbs olive or canola oil
Dash pepper

Directions

Mix together lime or lemon juice, honey and salt.

Mash 1/2 cup blueberries into the lemon or lime juice juice and honey mixture.

Stir in yogurt, pepper and oil and blend well.

Taste for seasoning.

Blueberry Vinaigrette Recipe #2

Ingredients

1/2 c olive oil
1/4 c red wine vinegar
2 tbs balsamic vinegar
1 clove garlic minced
2 tsp prepared mustard
1/2 tsp salt
1/4 tsp pepper
1/2 c blueberries fresh or frozen (thawed)

Put all ingredients except blueberries into a bowl and whisk to blend well.

Add Blueberries and stir gently.

Serve over mixed greens or store in refrigerator.

Ingredients

1 c cocoa powder
1 1/2 c sugar
1 dash salt
1 1/2 c water
1 tsp vanilla extract

Directions

Combine ingredients in medium saucepan and stir until well blended.

Stirring continuously, let chocolate sauce boil vigorously for 2 to 5 minutes, or until sauce begins to thicken.

Remove from stove and allow to cool a little before serving over pancakes or ice cream for Valentine’s Day.

Store unused chocolate sauce in the frig.

Rich Hot Fudge Sauce Recipe

Ingredients

1/2 c unsweetened cocoa powder
1/3 c granulated sugar
1/3 c packed dark brown sugar
3 tbs butter
1/2 c heavy whipping cream

Directions

In a small mixing bowl, blend cocoa powder with sugar.

In a medium saucepan, melt butter over low heat, being careful not to scorch. Add cream and mix well, stirring constantly.

Keep stirring for about 3 minutes or until bubbles form around the edges of the pan. Stir in sugar and cocoa mixture.

Keep cooking, stirring constantly. Cook about 1-2 minutes more, making sure cocoa and sugar are blended in and dissolved.

Cookie Recipes - Cherry Winks

This cherry winks recipe is great for the holiday or any time.

Ingredients for Cherry Winks

3/4 c shortening
1 c sugar
2 eggs
2 tsp millk
1 tsp vanilla
2 1/4 c flour
1 tsp baking powder
1/2 tsp soda
1/2 tsp salt
1 c pecans or walnuts, chopped
1 c dates
1/3 c maraschino cherries chopped
2 1/2 c crushed corn flakes

Directions for Cherry Winks

Preheat oven to 350 degrees.

Blend shortening and sugar. Add eggs, miilk and vanilla and continue to blend.

In separate bowl combine flour, baking powder, baking soda and salt. Blend this with egg and
milk mixture.

Add pecans or walnuts, dates and chopped cherries.

Make little balls and drop into crushed corn flakes.

Bake 12 to 15 minutes.

Delicious!


I make this great candied walnut recipe as a gift at Christmas time. It makes a great holiday nut treat for the candy dish. Walnuts have the added advantage of being very good for you too!

Ingredients

1 c white sugar
2 tbs brown sugar
1/2 c water
1/2 tsp cinnamon
1/4 tsp ginger
2 cups walnut halves

Place all ingredients except walnuts in a medium pan and bring to a boil, stirring frequently.

Put cold water in a cup and drip syrup into water. Once soft ball has formed in the water, the syrup is done.

Remove syrup from heat and stir in walnuts.

Lay out on wax paper to dry, separating walnuts from each other. Store candied walnuts in a container with a lid once they are dry.
