Christmas Peanut Brittle

brittle is easy to make and also makes a terrific gift from the kitchen.

Peanut Brittle Recipe


Ingredients for peanut brittle

1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts
2 tbs butter, softened
1 tsp baking soda

Directions for Cooking

Grease a large cookie sheet and then set it aside for later.

Using a heavy saucepan, bring sugar, corn syrup, salt and water to a boil over medium heat, stirring until the sugar is dissolved.

Add peanuts to mixture and stir in.

Continue cooking, stirring frequently until candy thermometer reaches 300 degrees F (150 degrees C), or until a hard ball forms when a little brittle is dropped into very cold water.

Remove peanut brittle from heat and immediately stir in butter or margarine and baking soda.

Pour candy onto greased cookie sheet at once.

Using 2 forks, lift and pull peanut mixture into rectangle about 14×12 inches and allow to cool.

This unique cake recipes comes from my mom’s 1920’s Iowa Farm Bureau Cookbook. It was submitted by Mrs. Donald Klopping. The recipe caught my eye because of the idea of adding a mashed potato to a cake recipe seemed interesting. The results are delicious though!

Historic recipes are not long on directions so I’m using the directions I used myself. Most old recipes presupposed that the cook really knew what she was doing in the kitchen!

Potato Caramel Cake Recipe

Ingredients

2-3 cups butter (I used 2 cups)
2 cups sugar
1-2 cup sweet milk ( I started with one cup and added a little more until I got to the right consistency)
1 cup mashed potato
2 cups flour
1-2 cups cocoa (I used one cup)
1 cup raisins
1 cup nuts ( I used walnuts)
4 eggs
2 tsp baking powder
1 tsp nutmeg
1-2 tsp cloves

Directions

Cream sugar and butter, then add egg yolks, potato, milk, spices, cocoa, nuts, and raisins rolled in flour. Mix well and then slowly add flour, blending as you go.

Beat egg whites until stiff and fold into cake batter.

Bake in a tube pan at 350.

In 1930, Ruth Wakefield and her husband, Kenneth, bought a 1709, Cape Cod-style toll house situated halfway between Boston and New Bedford, Massachusetts, just outside the town of Whitman.

A toll house used to serve as an inn and eating establishment for road-weary travelers. Here passengers paid their toll, changed horses, and ate welcome home style meals. This particular toll house, purchased by the Wakefields, was turned into a lodge called The Toll House Inn, with Ruth baking for all the guests who stayed at there.

Ruth used historic and traditional Colonial recipes, for her guests and her delicious desserts began attracting people from all over New England. One favorite cookie recipe from the Colonial Days was called Butter Drop Do cookies. One day, while preparing these, she decided to cut up a Nestle Semi-Sweet Chocolate candy bar and add it to the cookie dough.

Ruth expected the chocolate to melt but instead, the chocolate bits held their shape and softened. This chocolate chip cookie recipe became extremely popular at the inn and it wasn’t long before Ruth’s cookie recipe was published in a Boston newspaper, then other newspapers in New England.

Ruth Wakefield’s chocolate chip cookie recipe caused the sale of Nestle Semi Sweet Chocolate Morsels to sky-rocket in the New England area. Soon, Ruth reached an agreement with the Nestle company which allowed them to print the recipe on the wrapper of the Semi-Sweet Chocolate bar and in exchange, Ruth received a life-time supply of chocolate so she could continue making delicious chocolate chip cookies, which Ruth had named Toll House Cookies, after her inn.

Nestle loved the idea so much, they even sold a special chopper with the candy bar for easier cutting. Then in 1939, the Nestle company started offering the tiny chocolate bits in ready to use packages. This best-selling chocolate chip continues to create delicious chocolate chip cookies today.

There’s nothing like a delicious blueberry cobbler on a warm summer evening. Try topping it with homemade vanilla ice cream and it takes you right back to a childhood spent in the country.

Ingredients

2 1/2 c frozen or fresh blueberries
1/4 to 1/2 c sugar to taste
2 tbs butter
1 1/2 c packaged biscuit mix
1 tbs sugar
2/3 c milk
1 tbs melted butter
1/2 c sugar
1 tbs cornstarch
1 tsp cinnamon
1/2 c boiling water

Blueberry Cobbler Directions

Preheat oven to 350 degrees F.

Heat blueberries and 1/4 c sugar to bubbling and until sugar is dissolved. Stir in butter.

Place this blueberry mixture into 8×8 baking dish.

Combine biscuit mix and 1 tbs sugar. Add milk and melted butter. Blend until smooth.

Spoon biscuit mix over hot blueberries.

Mix 1/2 c sugar, cornstarch and cinnamon. Sprinkle this topping over batter.

Pour boiling water over the entire mixture.

Bake for about 30 minutes or until done.

Variation: You can also try this with double the biscuit mixture if you’d like more crust.

splurge on calories if you’re adding superfood blueberries to your muffins. They make a tasty treat for breakfast, dinner or a snack.

Ingredients

1 stick butter, softened
3/4 c. sugar plus additional for sprinkling the muffins
2 lg. eggs
1 1/2 tsp. vanilla
3/4 c. sour cream
2 c. all-purpose flour
1/4 tsp. baking soda
1/2 tsp. salt
2 c. fresh blueberries

Directions

Cream butter and 3/4 cup of the sugar in a medium mixing bowl, then add eggs, beating them in one at a time.

Add vanilla and sour cream and continue beating.

In a separate mixing bowl sift together flour, baking soda and the salt.

Stir flour mixture into butter and sour cream mixture until well combined.

Fold blueberries into the batter.

Spoon the batter into a 12 muffin tin baking pan, with paper liners.

Sprinkle blueberry muffin tops with additional sugar.

Bake these sour cream blueberry muffins at 375 degrees for 25-30 minutes or until just golden and a toothpick comes out clean.

I always love a great Hannah Swensen mystery by Joanne Fluke and Blueberry Muffin Murder was another hit. Reading a Joanne Fluke mystery, set in Lake Eden, Minnesota, is like having a homey visit with Hannah, her sister Andrea, Hannah’s two boyfriends, Mike and Norman, and all the various characters who reside in this chilly little town, including the neurotic Moishe the cat.

Hannah, who owns and operates The Cookie Jar, a popular bake and coffee shop in Lake Eden. These light-hearted cookie mysteries always seem to kill off some person who isn’t very well liked anyway and the Blueberry Muffin Murder is no exception. This time the victim is Connie Mac, a famous TV chef who comes to Lake Eden to open a store - and gets killed in the process. The fact that Connie Mac died in Hannah’s shop - with one of Hannah’s blueberry muffins - still in her hand, gives Hannah and her sister a special interest in the case.Despite the fact that one of Hannah’s boyfriends, Mike, is a police officer in Lake Eden who forbids Hannah to investigate the murder, the clues are piling up and Hannah is on the case.

Joanne Fluke mysteries are all interspersed with real recipes and the Blueberry Muffin Murder is no exception. Blueberry Brunch Cake Recipe

This scrumptious blueberry brunch cake recipe is a favorite in my family for Sunday brunch or any special breakfast.

Ingredients

Cake

1 c margarine
1 3/4 c sugar
1 tsp vanilla
4 eggs
3 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 can (21oz) prepared blueberry pie filling
1/4 tsp nutmeg

Glaze

1 1/4 c powdered sugar
1 tbs margarine
2-3 tbs lemon juice
a few drops of yellow food coloring

Directions

Preheat oven to 350 degrees.

Grease and flour a 15×10 jelly roll pan.

In a large mixing bowl, combine margarine, sugar and vanilla and creme together. Add eggs, one at a time and beat well after each one.

Lightly spoon flour into a measuring cup and level it off.

By hand, stir in the flour, baking powder and salt. Blend well.

Spread half the batter in the prepared pan.

Stir nutmeg into pie filling and spread it evenly over the batter.

Drop remaining batter by teaspoonfuls over the filling.

Bake for 30 to 40 minutes until blueberry cake is golden brown.

Combine glaze ingredients and blend until smooth. If glaze seems too thick, add a few drops of water until it is the desired consistency.

Drizzle the glaze on the warm cake.

Cake makes 24 servings.


I have to admit my Easter cupcakes were made from a cake mix this time as I’ve been fighting a cold. Still, the art is in the cup cake decorating and these cute Easter cupcakes are very easy to make.

3 C Powdered Sugar
1 stick butter or margarine
Just enough milk to make a good consistency frosting

Mix these together until smooth. Add green food coloring.

Flaked coconut
Green food coloring
Jelly Beans and Candy Eggs

Mix a few drops of green food coloring into the coconut until you get the color of grass.

Frost cupcakes with green frosting, pile on some “grass” and set a few eggs in the center. You’re done!

My grandkids love these easy Easter cupcakes so I always make a double batch.

Recipe for Easy Cherry Cobbler

This cherry cobbler has a crunchy crust and the sugar-cornstarch sauce makes a delicious sweet liquid for your cobbler so it doesn’t dry out like some recipes I’ve tried.

Ingredients

5 cups fresh or frozen cherries ( I used frozen organic cherries for this recipe)
1 1/2 tbsp. lemon juice
2 c. flour
3 c. sugar, divided
1 c. milk
1/3 c. butter, soft ( I used ghee here and it was luscious!)
2 tsp. baking powder
1 tsp. salt, divided
2 tbsp. cornstarch
1 1/2 c. boiling water

Directions for Easy Cherry Cobbler

Add Cherries to a greased, 2 1/2 quart baking dish and spread evenly.

Sprinkle cherries with lemon juice and toss to coat evenly. Set cherries aside.

In a small mixing bowl, blend flour, 1 1/2 c sugar, milk, butter, baking powder and 1/2 tsp salt.

When mixture is well blended, spread it evenly over the cherries.

Boil the water and add cornstarch, 1/2 tsp of salt, and 1 1/2 c sugar and stir until smooth.

Brown crunchy crust and sweet sauce make this cherry cobbler special.

Pour water and cornstarch mixture over cobbler.

Bake cobbler at 350 degrees for 1 hour.

Cobbler is done when the top is a hard crust.


Jumble cookies

Here are two of my favorite cookie recipes. Jumble cookies and Vanilla Refrigerator Cookies. Your family will love them and both are delicious!

Jumble Cookies

This jumble cookie recipe is super easy to make and were a favorite of my grandmother’s. The cinnamon also creates a mouth-watering fragrance in your kitchen!

Ingredients for Jumble Cookies

1 c butter
1 c sugar
1 tbs cinnamon
3 c flour

Cream butter and sugar. Beat in cinnamon and gradually add flour.

Roll into tube about 2 inches thick and refrigerate dough for a couple of hours.

Remove from frig, slice and flatten.

Sprinkle each cookie with sugar and bake at 350 for 10 to 12 minutes.

Vanilla Refrigerator Cookies

Ingredients

1/2 c shortening
1 c sugar
1 egg
1 tsp vanilla
1 1/2 c flour
1/2 tsp baking soda
1/2 tsp salt

Cream first 4 ingredients.

Add dry ingredients slowly and blend well.

Roll into a 2 inch tube and refrigerate for several hours.

Slice tube into cookies, flatten them and bake at 375 degrees for 10 minutes.

Ingredients

1 c cocoa powder
1 1/2 c sugar
1 dash salt
1 1/2 c water
1 tsp vanilla extract

Directions

Combine ingredients in medium saucepan and stir until well blended.

Stirring continuously, let chocolate sauce boil vigorously for 2 to 5 minutes, or until sauce begins to thicken.

Remove from stove and allow to cool a little before serving over pancakes or ice cream for Valentine’s Day.

Store unused chocolate sauce in the frig.

Try these additional tasty ingredients if you’d like:

Rich Hot Fudge Sauce Recipe

Ingredients

1/2 c unsweetened cocoa powder
1/3 c granulated sugar
1/3 c packed dark brown sugar
3 tbs butter
1/2 c heavy whipping cream

Directions

In a small mixing bowl, blend cocoa powder with sugar.

In a medium saucepan, melt butter over low heat, being careful not to scorch. Add cream and mix well, stirring constantly.

Keep stirring for about 3 minutes or until bubbles form around the edges of the pan. Stir in sugar and cocoa mixture.

Keep cooking, stirring constantly. Cook about 1-2 minutes more, making sure cocoa and sugar are blended in and dissolved.

Cookie Recipes - Cherry Winks

This cherry winks recipe is great for the holiday or any time.

Ingredients for Cherry Winks

3/4 c shortening
1 c sugar
2 eggs
2 tsp millk
1 tsp vanilla
2 1/4 c flour
1 tsp baking powder
1/2 tsp soda
1/2 tsp salt
1 c pecans or walnuts, chopped
1 c dates
1/3 c maraschino cherries chopped
2 1/2 c crushed corn flakes

Directions for Cherry Winks

Preheat oven to 350 degrees.

Blend shortening and sugar. Add eggs, miilk and vanilla and continue to blend.

In separate bowl combine flour, baking powder, baking soda and salt. Blend this with egg and
milk mixture.

Add pecans or walnuts, dates and chopped cherries.

Make little balls and drop into crushed corn flakes.

Bake 12 to 15 minutes.

Delicious!



Cranberries are in season over the fall holidays so why not try a new cranberry recipe? This Cranberry Pudding is festive and colorful enough for any holiday party.

Ingredients

1/1/3 c flour
1/2 c molasses, mild flavor
2 c whole raw cranberries
1/4 c chopped nuts
2 tsp baking soda
1/3 c hot water

Directions for Cranberry Pudding

In a medium mixing bowl, combine flour, molasses, cranberries and nuts.

Add baking soda to hot water and pour into the bowl with the beet mixture.

Mix lightly.

Pour into greased 1 qt mold. Cover tightly with foil.

Steam over boiling water for 1 1/2 hours.

Serve warm with vanilla sauce.

To double recipe for larger mold, add one more hour of steaming.

Vanilla Sauce Topping Recipe

Ingredients

1 c sugar
2 tsp flour
1/2 c butter
1/2 c light cream

Combine ingredients and bring to a boil over low heat.

Cook for 2 to 3 minutes, then add 1/4 tsp vanilla.

Serve hot.
