Ingredients

2 20 oz cans of pie apples (not pie filling)
1 16 oz bag whole cranberries
3/4 cup sugar
1/2 cup packed brown sugar

Topping Ingredients

1/2 stick butter
1 1/2 cups crushed corn flakes
2/3 cups sugar
1/2 tsp ground cinnamon
1 cup chopped pecans

Directions

Preheat your oven to 325 degrees.

In a medium mixing bowl, combine all ingredients and mix well.

Spray 2 quart baking dish with cooking spray and fill with apple/cranberry mixture.

For topping, melt butter in a saucepan. Add other topping ingredients and toss well to totally cover.

Spoon topping over apple/cranberry mixture in baking dish.

Bake for one hour.

Serve hot or at room temperature.

Serves 4 to 6 people.

Ingredients

1 1/2 c frozen mixed berries
3/4 cup berry flavored yogurt
1/2 cup brewed white tea
1/2 cup pomegranate juice
1 small banana

Place all ingredients into a blender, and blend until smooth.

Very Easy Blueberry Syrup Recipe

This blueberry syrup recipe is super easy and delicious. It can be used over ice cream, pancakes or waffles or add it to ice tea for a great berry flavored drink. It also makes a delicious gift from your kitchen for the holidays.

Ingredients for Easy Blueberry Syrup

3 c blueberries fresh or frozen

2/3 c. light corn syrup

Dash of salt

Cooking Instructions

Place all three ingredients into your blender. Cover and blend on liquid setting until syrup is smooth.

Pour blueberry mixture into a medium saucepan.

Boil mixture for about 5 minutes. Stir constantly to avoid sticking.

This easy blueberry syrup is terrific served over waffles or pancakes or try it on ice cream. Can also be added to your ice tea to make blueberry iced tea. This syrup can also be chilled and reheated.

This easy recipes yields 3 1/2 cups of blueberry syrup.

There’s nothing like a delicious blueberry cobbler on a warm summer evening. Try topping it with homemade vanilla ice cream and it takes you right back to a childhood spent in the country.

Ingredients

2 1/2 c frozen or fresh blueberries
1/4 to 1/2 c sugar to taste
2 tbs butter
1 1/2 c packaged biscuit mix
1 tbs sugar
2/3 c milk
1 tbs melted butter
1/2 c sugar
1 tbs cornstarch
1 tsp cinnamon
1/2 c boiling water

Blueberry Cobbler Directions

Preheat oven to 350 degrees F.

Heat blueberries and 1/4 c sugar to bubbling and until sugar is dissolved. Stir in butter.

Place this blueberry mixture into 8×8 baking dish.

Combine biscuit mix and 1 tbs sugar. Add milk and melted butter. Blend until smooth.

Spoon biscuit mix over hot blueberries.

Mix 1/2 c sugar, cornstarch and cinnamon. Sprinkle this topping over batter.

Pour boiling water over the entire mixture.

Bake for about 30 minutes or until done.

Variation: You can also try this with double the biscuit mixture if you’d like more crust.

Blueberry Vinaigrette Recipe #1

Ingredients

1/4 c fresh lime or lemon juice
1 tbs honey or sugar
1/2 tsp salt
1 c fresh blueberries
1/4 c plain yogurt
2 tbs olive or canola oil
Dash pepper

Directions

Mix together lime or lemon juice, honey and salt.

Mash 1/2 cup blueberries into the lemon or lime juice juice and honey mixture.

Stir in yogurt, pepper and oil and blend well.

Taste for seasoning.

Blueberry Vinaigrette Recipe #2

Ingredients

1/2 c olive oil
1/4 c red wine vinegar
2 tbs balsamic vinegar
1 clove garlic minced
2 tsp prepared mustard
1/2 tsp salt
1/4 tsp pepper
1/2 c blueberries fresh or frozen (thawed)

Put all ingredients except blueberries into a bowl and whisk to blend well.

Add Blueberries and stir gently.

Serve over mixed greens or store in refrigerator.

Directions for Smoothie

Using your blender, add banana, yogurt, flax seed meal, soy milk and honey. Blend these ingredients on low until smooth.

Add blueberries and then continue blending.

Once banana and blueberries are fully chopped, increase speed to medium.

Continue blending until you reach the consistency you want.

Blueberry Brunch Cake Recipe

This scrumptious blueberry brunch cake recipe is a favorite in my family for Sunday brunch or any special breakfast.

Ingredients

Cake

1 c margarine
1 3/4 c sugar
1 tsp vanilla
4 eggs
3 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 can (21oz) prepared blueberry pie filling
1/4 tsp nutmeg

Glaze

1 1/4 c powdered sugar
1 tbs margarine
2-3 tbs lemon juice
a few drops of yellow food coloring

Directions

Preheat oven to 350 degrees.

Grease and flour a 15×10 jelly roll pan.

In a large mixing bowl, combine margarine, sugar and vanilla and creme together. Add eggs, one at a time and beat well after each one.

Lightly spoon flour into a measuring cup and level it off.

By hand, stir in the flour, baking powder and salt. Blend well.

Spread half the batter in the prepared pan.

Stir nutmeg into pie filling and spread it evenly over the batter.

Drop remaining batter by teaspoonfuls over the filling.

Bake for 30 to 40 minutes until blueberry cake is golden brown.

Combine glaze ingredients and blend until smooth. If glaze seems too thick, add a few drops of water until it is the desired consistency.

Drizzle the glaze on the warm cake.

Cake makes 24 servings.


Easy Blueberry Pancake Recipe

With this easy low fat version of the traditional blueberry pancake recipe lets you enjoy a delicious breakfast and lose weight too. Ingredients for low fat blueberry pancakes

¼ c whole wheat flour

½ tsp ground cinnamon
2 egg whites
2 tbs plain nonfat yogurt
2 tbs skim milk
2 tbs water
¾ c blueberries

Directions

Preheat oven 200 F. degrees for keeping the pancakes warm while you finish cooking.

In a medium mixing bowl, blend the wheat and all-purpose flours and mix in oats, cornmeal, honey, baking powder, baking soda, salt and cinnamon.

In a separate mixing bowl whisk together eggs, yogurt, milk and water. Carefully fold in blueberries.

Slowly add wet ingredients to the dry ingredients and mix gently, just moistened.

Pour batter into skillet, using about 1/3 c of batter for each blueberry pancake. Brown on both sides and make sure middle is cooked before taking from heat.

If your blueberry pancake browns too quickly before center is done, turn heat down.

As you cook each pancake, put it into to a baking dish, cover with foil and place in warmed oven until ready to serve.

This delicious fruit salad blends the flavors of crunchy toasted almonds and luscious fruit with a tasty vanilla-cinnamon topping to create a terrific weightloss treat. Superfood blueberries are filled with antioxidants too.

Ingredients:

3 cups strawberry halves
2 cups blueberries
2 bananas, sliced
2 cups seedless grapes (red or green)
8 ounce container vanilla yogurt (any brand or type)
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/2 cup toasted almonds (sliced, slivered, or chopped)*

Directions

Gently toss strawberries, blueberries, bananas and grapes in a large mixing bowl. Divide fruit into 8 individual salad bowls.

Mix yogurt, cinnamon, and vanilla extract together in a 4-cup measure and stir to blend well.

Drizzle the yogurt mixture evenly over each fruit salad serving and sprinkle with a tablespoon of toasted almonds.

Your Cinnamon-Almond Fruit Salad is ready to serve.

If you’re toasting your own almonds, place them in single layer in a nonstick frying pan and lightly brown over medium heat, stirring frequently. Let cool before using.

Ingredients

1/1/3 c flour
1/2 c molasses, mild flavor
2 c whole raw cranberries
1/4 c chopped nuts
2 tsp baking soda
1/3 c hot water

Directions for Cranberry Pudding

In a medium mixing bowl, combine flour, molasses, cranberries and nuts.

Add baking soda to hot water and pour into the bowl with the beet mixture.

Mix lightly.

Pour into greased 1 qt mold. Cover tightly with foil.

Steam over boiling water for 1 1/2 hours.

Serve warm with vanilla sauce.

To double recipe for larger mold, add one more hour of steaming.

Vanilla Sauce Topping Recipe

Ingredients

1 c sugar
2 tsp flour
1/2 c butter
1/2 c light cream

Combine ingredients and bring to a boil over low heat.

Cook for 2 to 3 minutes, then add 1/4 tsp vanilla.

Serve hot.

The cherry pie filling makes this fruit salad so rich and luscious, you could use it as a dessert too. Perfect for holiday dinner guests or for any special occasion.

Easy Cranberry Apple Salad Recipe

Cranberries are plentiful around the holidays and they’ll give your immune system a boost too! This cranberry salad recipe has the added health benefit of nuts and apples, as well.

Try this delicious, easy cranberry salad recipe for your next holiday dinner.

Ingredients

1 package cranberries
2 c water
1 c sugar
1 package lemon jello
1 c chopped apples
1 c chopped nuts
15 cut up marshmallows

Directions for Cranberry Apple Salad Recipe

IN a medium saucepan, combine the water, cranberries and sugar, boiling for 5 minutes.

Add lemon jello, mix until jello is dissolved. Cool.

Add apples, nuts and marshmallows and combine.

Put in refrigerator until jello is set, about 2 hours.

Basic Cranberry Sauce

Cranberry sauce is a favorite holiday dish and is very easy to make. Cranberries are packed with nutrients and good for boosting the immune system in cold winter months.

Ingredients

1 c. sugar - use organic, raw sugar if you prefer
1 c. water
4 c (one 12-oz package) fresh or frozen cranberries

Directions for Cranberry Sauce

Put cranberries into large bowl and rinse. Check for any with flaws or bad spots and discard.
Bring one cup water to a boil in medium saucepan. Slowly add sugar and stir to dissolve. Add cranberries to water.

Reduce heat, simmer for about 10-15 minutes or until cranberries burst.

For variations to this cranberry sauce recipe, one cup of raisins or chopped oranges can be added, or 1/2 cup nuts.

Remove cranberry sauce from the heat. Cool it to room temperature and then it can be chilled in the refrigerator. As it cools, your cranberry sauce will thicken.

The Cranberry sauce base recipe yields about 2 1/4 cups.

Let cool and serve.

Try these optional ingredients for your Cranberry Sauce Recipe.

  • ½ pecans
  • ½ c walnuts
  • ½ c orange peeled and chopped. If you use orange, replace water in recipe with orange juice.
  • Substitute 1c raspberry vinegar for water
  • Substitute 1 c pomegranate juice for water
  • Add 1 tsp fresh minced ginger
  • 1 c raisins
  • 1 c currants
  • 1 c dried blueberries
  • 1 tsp cinnamon
  • 1 tsp nutmeg
